Healthy Living: Mango Salsa Makes for a Tasty Summer Treat

If you're like us here at Exact Science, you probably spend a lot of time thinking about creative ways to fit healthier foods into your diet. This can be especially tough in the summer, a season ruled by brats, burgers and ice cream cones.
One of Exact Sciences team member Nada's favorite tricks for eating healthier in the warm months is making mango salsa, a surprisingly sweet treat perfect for hot summer days. A single ½ cup serving of Nada's mango salsa includes less than 80 calories and no fat or cholesterol, plus fiber, protein and plenty of other good stuff.
Here's how she makes it:
INGREDIENTS:
- 2 large mangoes
- ½ cup finely chopped red onion
- ½ cucumber, peeled, seeded and chopped
- ½ cup minced cilantro
- ¼ cup fresh lime juice
- 1 pinch each salt and pepper
DIRECTIONS:
- Peel the mango and cut along the sides of the pit to remove its flesh. Dice the fruit into 1-inch cubes and place them in a bowl.
- Add the remaining ingredients and mix until well blended.
- Serve with baked chips
